You'll see a whole other sunset again, because by standing up you've made your horizon move away far enough to see the entire sun disk above it again. This very easy to make observation would be impossible on a flat earth, because if the earth was flat, the distance to the horizon would not shrink as you lower yourself closer to the ground. I've also experienced the same thing flying airplanes with a very high climb rate. It doesn't because he already assumed it was a sphere. A local sun at a certain altitude above a flat earth will give the same effect. A problem will probably arise if you take a third location and redo the calculation of the sun's altitude... it will probably come out with a different number and therefore contradict the first calculation.
